Cheesy Cauliflower Breadsticks

Love nachos but not all the carbs? Here’s a healthy, low carb alternative to satisfy that craving!

Ingredients

  • 1 head cauliflower
  • 2 small eggs (if you have jumbo eggs, just need 1)
  • 2 C. grated cheese (I used part mozzarella and part sharp cheddar)
  • 1/4 tsp. garlic powder
  • 1/4 tsp. oregano
  • 1/4 tsp. cumin
  • 1/4 tsp. chipotle chile powder
  • 1/4 tsp. smoked paprika
  • pinch of salt & pepper

Garnish Toppings:

  • guacamole
  • sour cream
  • salsa
  • crumbled queso fresco
  • chopped cilantro
  • sliced green onions

Instructions

  1. Preheat oven to 400 degrees
  2. Remove core from cauliflower and cut up florets into smaller pieces. Add to food processor and finely chop cauliflower. Place in microwave safe bowl.
  3. Microwave, covered, on high for about 6-8 minutes.
  4. Set aside and let it cool a bit, then dump cauliflower onto a kitchen towel or cheese cloth and squeeze out excess water (you’ll get a lot of water, keep squeezing), return cauliflower to bowl.
  5. Add eggs, 1 1/2 C. cheese and seasonings and mix well.
  6. Line a baking sheet with parchment paper or use a silicone baking mat and spread cauliflower mixture on baking sheet and shape into a rectangle, about a 1/2 inch thick.
  7. Bake in oven for 30 minutes.
  8. Remove from oven, add remaining 1/2 cup cheese* on top and return to oven until cheese is melted and bubbly good!
  9. Let it rest for a few minutes, then slice into breadstick shape sticks.
  10. Top with some guacamole, sour cream, salsa, crumbled queso fresco, chopped cilantro and sliced green onions, as desired.

If the cauliflower mixture seems a little wet you can add a tablespoon of almond flour to the mixture.
