Quinoa, Cherry and Chicken Salad
The amounts listed are just a guideline...you can adjust the amount of each ingredient in the salad to your personal preference.
Serves: 2 large salads
  • 1 C. diced, cooked chicken
  • ¾ C. cooked and cooled quinoa (cook according to package directions)
  • 2 C. spinach
  • 1½ C. shredded brussels sprouts
  • ½ C. dried cherries
  • ¼ C. shelled pistachios
  • ¼ C. crumbled goat cheese
  • 3 Tbls. olive oil
  • 2 Tbls. white balsamic vinegar
  • 2 tsp. honey
  • 1-2 tsp. lemon juice (to taste)
  • pinch of salt & pepper
  1. Make the Vinaigrette: Combine the vinaigrette ingredients in small bowl and whisk to combine. Set aside.
  2. Assemble the Salad: Combine salad ingredients in bowl. Add vinaigrette and toss to combine.
