Ahhhh, Memorial Day! The unofficial start to summer vacation. And grilling season! I’m always so excited for summer, sitting in the yard, sipping a cocktail and cooking on the grill. Isn’t that the best? Unfortunately for me, this year I have no yard, no deck, no grill. How am I suppose to enjoy summer? My answer…find friends with a yard, deck/patio, and a grill (hello, Susan, I’m looking at you!). I may not be able to grill outdoors much this summer but I can share a few of my favorite grilling recipes for Memorial Day.
First, before I get to the recipes, let’s remember what Memorial Day is really all about. A time to remember and give thanks to all the brave men and women who have lost their lives while unselfishly serving our nation! THANK YOU, and thank you to their families for serving as well.
Now, for a few of my favorite grilling recipes for Memorial Day…or any day:
1. Grilled Salmon with Pineapple Jalapeño Salsa: I love salmon and especially love it cooked on the grill. The sweet pineapple and spicy kick from the jalapeño combine to make a really fabulous salsa to top the salmon. Yummmm!
2. Grilled Pork Chops with Thai Honey Lime Marinade: This marinade is fantastic with thick pork chops. It adds a lot of flavor to the meat and keeps it moist while grilling!
3. Rosemary Garlic Lamb Lollipops: Still probably one of my all time favorite things to eat! I’m not sure if it’s the cute little “lollipops” that I like so much or just the fact that rosemary, garlic and lamb is just so darn good! I could eat these every week!
4. Chipotle Honey BBQ Ribs: How about some ribs for your Memorial Day cookout? I did a rib recipe cook off last summer and these chipotle honey BBQ ribs were the winner! And if you love chipotle as much as I do, I guarantee you will love these ribs.
I hope these recipes will inspire you to try something different than plain ol’ burgers and dogs on the grill this weekend….although I have to admit, I’d be perfectly happy with burgers and dogs on the grill anytime!
