It’s that time of year again. Time for the endless lists of Top 10 this or that. I don’t want to miss out on all the fun so I’m going to do two top 10 lists this year! First up: Top 10 Recipes of 2014 (as determined by number of page visits, which means basically the ones that got the most social media love). Next I’ll do the top cocktails of 2014 so be sure to check back for that as well.
#10 – Chicken Pad Thai with Zucchini Noodles
I love a good Pad Thai. With this Chicken Pad Thai recipe I wanted to cut back on some of the carbs so I replaced the rice noodles with zucchini “noodles” – zoodles! While it’s not completely low carb because the sauce has palm sugar, it’s lower in carbs than regular Pad Thai and tastes totally awesome!
#9 – Honey Apple Cake
I got this recipe for Honey Apple Cake from my sister-in-law and it’s devine. So, so moist and the sauce drizzled over the cake takes it to the next level!
#8 Asian Grilled Chicken
The marinade for this Asian grilled chicken is so easy to make and tastes GREAT. Sort of a cross between Chinese and Thai BBQ chicken. Use breasts, thighs or even cut up chicken pieces.
#7 Chicken Salad with Curry Dressing
I love a good curried chicken salad sandwich so I thought I’d try to deconstruct that into a Chicken Salad with Curry Dressing. The result was fantastic! The curry dressing turned out so delicious!
#6 West African Chicken Stew
I love the combination of flavors in this West African Chicken Stew with peanut butter, jalapeño, ginger, and tomatoes. So unique and super tasty.
#5 Loaded Chipotle Potatoes
These Loaded Chipotle Potatoes are to die for! Full of cheese, sour cream and bacon…what’s not to love? They’re even kicked up a notch with chipotle!
#4 Pumpkin Mac ‘n Cheese
Everybody seems to love pumpkin and this Pumpkin Mac ‘n Cheese did not disappoint. The cheese sauce is enhanced with dijon mustard, garlic powder and smoked paprika…and of course some pumpkin.
#3 Chicken Pesto Pasta Bake
This Chicken Pesto Pasta Bake has pretty much all my favorite things…Pesto, cheese, mushrooms, spinach, and pasta…YUM! No wonder it was a favorite this year.
#2 Mexican Taco Casserole
Who doesn’t love tacos, enchiladas and good ol’ Mexican food? This Mexican Taco Casserole is delicious, easy to customize and down right delicious! I made it with ground turkey, but ground beef is good too. It’s not too spicy so be sure to pass some hot sauce at the table if you like your Mexican food a bit spicier.
And now, the most viewed recipe in 2014:
Thai Cucumber Salad
I’m not surprised this Thai Cucumber Salad is such a popular recipe, it’s easy to make and has the wonderful salty, sweet, sour, and spicy combination that’s so perfect in Thai food.
Well that’s the list of the Top 10 Recipes of 2014…or at least the ones that took off on social media. Have you tried any of these recipes yet? If not, I hope you will! Next up, Top 10 Cocktail Recipes of 2014.
