What I Eat When I’m Not Cooking For The Blog

Have you ever wondered what food bloggers really eat on a daily basis? Trust me, it’s usually not as fancy as all those styled food photos you see around the internet, well, at least my meals aren’t! I thought it might be fun to share with you today what I eat when I’m not cooking for the blog.

Ever wonder what food bloggers really eat?  Here's what I typically eat when I'm not  cooking or photographing for the blog.While I love to cook, the reality is my husband is gone a lot and cooking for one isn’t all that exciting. I usually want something simple and fast, or use up leftovers. Not to mention it’s really nice to just dig in, not worry about food styling, taking pretty pictures and eating cold food!

Recently I was looking through photos of my dinners I took with my iPhone. I like to take pictures in case I make something that’s super yummy and might be good to develop and make a blog post out of.   Forgive the picture quality…no styling, lighting, fancy camera and garnishes allowed in these photos!  Just a big ol’ bowl of food, like normal people usually eat!

Spiralized Zucchini w/Shrimp and Peppers

Zucchini noodles w/shrimp and bell peppersThis was really good and quite typical of what I eat a lot of when my husband is gone.  I quickly sautéed some shrimp and small, colorful sliced peppers in a little olive oil, garlic, salt & pepper, then tossed it together with some spiralized yellow and green zucchini. Doesn’t get much easier than that. Could add pinch of red pepper flakes, that would be good!

 Thai Turkey Quinoa Salad

Thai turkey quinoa saladI made this last week and it was really delicious!  Ground turkey, quinoa and a light Thai “dressing”. Definitely blog worthy with perhaps a bit of refinement. Stay tuned, you may see this in an upcoming post. I loved it!

 Shrimp Quesadillas

shrimp quesadilla with guacamoleWhen my son was in town we made this for dinner one night.  Sauteed shrimp (I like shrimp, it cooks super fast, but I also eat a lot of chicken) with some sliced small colorful bell peppers and onion, and sandwiched it between two flour tortillas filled with lots of CHEESE!  Topped with homemade guacamole, it’s a winner! How can you go wrong with quesadillas?

Zucchini Noodles w/Artichoke Hearts & Shaved Parmesan

Zucchini noodles with artichokes and parmesan I also eat a lot of spiralized zucchini.  Usually I spiralize a few at a time and store them in the refrigerator so I can quickly toss something together.  This time is was some leftover artichoke hearts I had from my Prosciutto Burrata Salad, some jarred spaghetti sauce and shaved parmesan cheese. Super fast, and while the photo may not look all that appetizing, it’s was actually quite tasty!

Grilled Salmon on Shaved Asparagus Salad

Grilled salmon on shaved asparagus saladThis happens to be one of those meals I enjoyed so much that I made a blog post for this recipe. Check out my Shaved Asparagus Salad with Lemon Vinaigrette recipe, it has a few other goodies that I added and it’s really delicious!

Wedge Salad

Wedge Salad with Bacon and Blue Cheese I think this is one of my all time favorite salads…the classic Wedge Salad.  I like mine with a balsamic vinaigrette instead of blue cheese dressing, and then crumble really good blue cheese all over it.  And, it’s got bacon, so of course it’s going to be good!

Grilled Chicken Thighs w/Shawarma Marinade

Shawarma Grilled Chicken ThighsI am definitely going to develop this recipe for a blog post…it was soooooo good! We grilled up some boneless chicken thighs that I marinated in a Shawarma marinade.  Sliced it up and ate it with some naan bread and topped with a garlic sauce.  I will make this again soon and share the recipe with you, you’re gonna love it!

 Zucchini with Asian Sauce and Sliced Almonds

Zucchini noodles with Asian Dressing and AlmondsAgain more spiralized zucchini. I told you I ate a lot of them! I was experimenting with some Asian dressings, trying to find a good all around one to use on salads.  Still working on that, but in the meantime, I quickly sautéed some zucchini noodles, tossed it with the dressing and sprinkled on sliced almonds.  Not bad at all, but not really blog worthy.

Vanilla Ice Cream

Vanilla Ice CreamOh yes, yes I do!  Sometimes I just eat ice cream for dinner!  Come on you know you would too if no one was looking!  This is my favorite Vanilla Ice Cream coming out of the ice cream maker.

So that’s a sample of what I eat when I’m not cooking for the blog.  Sometimes I’ll also just have a bowl of cereal or a peanut butter and jelly sandwich.  What do you typically eat when you’re just cooking for one or want something quick and easy?

    You are going to love the zucchini that I just picked from my garden and used for a recipe that will be up on the blog soon. It was bigger than my dogs! Seriously, I’m not kidding.

    You eat very much like I do, except for the meat and dairy. And yes, I’d eat ice cream for dinner even if someone was looking-haha!

    These recipes still look amazing!! I know what you mean though, I will make a dish and as fancy/wonderful as it is, sometimes I am just not in the mood to style and take photos. We all need a break once in a while!

    Love this!! That pasta with the artichoke hearts has me drooling… And ice cream for dinner? Heck yeah! My family celebrates International Eat Ice Cream for Breakfast Day (1st Saturday in February) every year. Sometimes ice cream just needs to be the main event.

      I will have to mark my calendar for next February!!! I did eat ice cream for breakfast yesterday…I was doing photos so of course the ice cream had to be eaten before it completely melted!

      Well not always! I do have my “just a bite of this”, especially a problem if there’s ice cream or cake or cookies in the house!
