If you love the classic combo of beets and cheese, these Beet, Burrata & Clementine Puff Pastry Bites are a fun and tasty twist. With sweet clementines, fresh basil, and a sprinkle of nuts, they’re bright, creamy, and perfect for entertaining.

I love the combination of roasted beets and creamy cheese—and when I found myself with a package of pre-cooked beets, a ball of burrata, and some puff pastry shells on hand, I asked Chatgpt for an appetizer using these ingredients.   I added a sunny citrus twist using juicy clementines and finished everything off with chopped basil and a sprinkle of chopped nuts.

The buttery puff pastry is the perfect base—crisp, golden, and light. Inside each shell, you get the earthy sweetness of beet, the cool richness of burrata, and bursts of brightness from the clementine. A drizzle of balsamic glaze adds depth, while chopped basil keeps things fresh and herbaceous. And don’t skip the chopped nuts (pistachios or walnuts)—they give each bite a perfect bit of crunch. Feel free to play around with what you have on hand—swap in goat cheese or ricotta if you don’t have burrata, or try a regular or blood orange instead.

These are simple to assemble and make a beautiful appetizer for a dinner party, holiday gathering, or even just a wine night at home. I love that they look a little gourmet but come together with just a handful of ingredients I often already have on hand.

Ingredients

Scale
  • 1 package puff pastry shells
  • 2 cooked beets, diced or sliced thin
  • 1 ball burrata, torn into bite-sized pieces
  • 1–2 clementines, segmented and chopped
  • Zest of 1 clementine
  • 2 tablespoons crushed pistachios or walnuts
  • 1–2 teaspoons Balsamic Glaze
  • basil, chopped
  • Olive oil (drizzle on top, if desired)
  • Salt & pepper

Instructions

  1. Bake shells if needed according to package directions and let cool slightly.

  2. Fill each shell with a few pieces of beet, a bit of clementine, and a spoonful of burrata.

  3. Garnish with a drizzle of olive oil and balsamic glaze. Sprinkle with clementine zest, chopped nuts, and fresh basil. Add salt and pepper to taste.

  4. Serve warm or at room temperature.
