I’m sure you’ve noticed not a lot of cooking is happening here since I moved to NYC. All my “stuff” is in storage and it’s just too hard to cook anything but the basics in this ill-equipped temporary apartment we’re living in. So while I’m sitting here in my pj’s, refusing to go outside in the “Polar Vortex” that’s happening right now (again), I’m deleting old photos on my computer. I came across photos of this Chile Cheese Carnitas Quesadilla I made a while back (a long while back actually) so I thought I’d share with you today.
I love to make quesadillas when I have leftovers so when I had leftover carnitas and chile cheese casserole, I made quesadillas. If you only have leftover carnitas, go ahead and make quesadillas anyways. Just add cheese and some salsa if you want. No carnitas? No problem, the chile cheese casserole makes a delicious filling in quesadillas too!
Typically, quesadillas are made with flour tortillas, but feel free to use corn tortillas if you prefer. I don’t think it matters…it’s all good! For this quesadilla, just put a little butter in a pan and when it melts add a tortilla, layer with some leftover carnitas and chile cheese casserole and top with another tortilla. Then it’s pretty much like making a grilled cheese sandwich…just flip it over and cook the other side. I like to add some sour cream, chopped tomato and cilantro to top it off. Guacamole is also delicious as a topping. So simple and such a great way to use up some leftovers!
