Cucumber Pineapple Mint Martini
  • 2 oz. cucumber vodka
  • 2 oz. pineapple juice
  • ½ oz. Cointreau (or Triple Sec)
  • ½ lime, juiced
  • several mint leaves*
  • splash simple syrup*
  1. Muddle mint in cocktail shaker (I like to use a little bit of crushed ice when muddling mint).
  2. Add remaining ingredients with ice and shake well.
  3. Strain into martini glass and garnish with pineapple or cucumber slice.
*If you want to use a mint flavored simple syrup, you can skip the muddling step and just use about ½ oz. mint simple syrup. I like to use a few muddled mint leaves AND mint simple syrup.
