Grilled Salmon with Pineapple Jalapeño Salsa

  • 1 large salmon fillet
  • 2 C small diced pineapple (about 1/2 pineapple)
  • 2 tomatoes, diced
  • 1 jalapeno, viens and seeds removed, chopped
  • 1/4 red onion, chopped
  • 1/2 C chopped cilantro
  • 1/2 lime, juiced
  • 1 tsp. cumin
  • pinch of salt

Instructions

  1. Heat grill to low heat, about 250 degrees. Coat salmon fillet with a bit of oil and sprinkle with salt and fresh ground black pepper. Grill salmon on low heat until cooked, about 10 minutes (5 minutes on each side).
  2. Combine all salsa ingredients and bowl. This can be done earlier and stored in refrigerator.
  3. Place grilled salmon on platter and top with pineapple jalapeno salsa (you won’t need all of the salsa).
