Mexican Cabbage Salad


  • 1/4 head green cabbage, shredded
  • 1/4 head red cabbage, shredded
  • 2 green onions, sliced
  • 1/2 C. diced red, yellow or orange bell peppers (or use a combination)
  • 1/2 C. diced jicama
  • 1 carrot, grated
  • handful of cilantro, roughly chopped
  • 1 can black beans, drained and rinsed
  • Chipotle Honey Lime Vinaigrette


  1. In large bowl, add all ingredients except dressing and mix well to combine. Add vinaigrette, as much as you like on salads, and toss. Serve.
  2. Refrigerate leftover vinaigrette to use again on another salad!
