If you haven’t notice by now with all of my Martini Madness recipes, I kind of like my drinks shaken and strained into a martini glass, even if they’re suppose to be in a tall glass over ice. And this goes for blended drinks as well. Like this Pina Colada-tini.
This Pina Colada-tini turned out to be a really tasty drink! A nice variation from my Mai Tai-tini that I usually make when I want a tropical, take me to the beach, kind of drink. It’s very similar to the Coconut Mango-tini, but uses white rum instead of mango vodka. A little Cream of Coconut was added along with pineapple juice just like a traditional pina colada. I wanted something a little different for this drink and wondered what would happen if I drizzled a little Blue Curacao in it. To my surprise, it sunk to the bottom and made a really pretty layered effect in the drink. If you shake it together, the drink just turns a light blue.
For those of you who prefer your Pina Colada blended…go ahead and throw it in a blender with some ice! It’s good that way too!
- 2 oz. rum
- 1 oz. coconut rum
- 2 oz. pineapple juice
- 1 oz. cream of coconut
- 1/2 oz. blue curaçao
- Garnish as desired
- Combine rums, pineapple juice and cream of coconut in a cocktail shaker filled with ice. Shake well and strain into chilled martini glass. Slowly drizzle down the side of the glass the blue curaçao. It will settle at the bottom and create a beautiful layered look.
