Quinoa, Cherry and Chicken Salad

Quinoa Cherry Chicken Salad with Brussels Sprouts, Spinach, Pistachios and Goat Cheese

The amounts listed are just a guideline…you can adjust the amount of each ingredient in the salad to your personal preference.


  • 1 C. diced, cooked chicken
  • 3/4 C. cooked and cooled quinoa (cook according to package directions)
  • 2 C. spinach
  • 1 1/2 C. shredded brussels sprouts
  • 1/2 C. dried cherries
  • 1/4 C. shelled pistachios
  • 1/4 C. crumbled goat cheese


  • 3 Tbls. olive oil
  • 2 Tbls. white balsamic vinegar
  • 2 tsp. honey
  • 12 tsp. lemon juice (to taste)
  • pinch of salt & pepper


  1. Make the Vinaigrette: Combine the vinaigrette ingredients in small bowl and whisk to combine. Set aside.
  2. Assemble the Salad: Combine salad ingredients in bowl. Add vinaigrette and toss to combine.
