Vegan Fruit Ceviche Style Salsa



1/2 C. diced mango

1/2 C. diced papaya

1/2 C. diced pineapple

1/2 C. diced jicama

1/2 C. diced hearts of palm

1/2 C. diced English cucumber

1/2 C. chopped cilantro

1/2 C. diced red onion

1/4 C. sliced green onion

1/4 C. fresh lime juice + zest from the limes

1 tsp. chili powder

1/8 tsp. cayenne pepper

salt & pepper,  to taste

1 avocado, diced

Tortilla chips for serving


  1. Combine all ingredients except avocado and. tortilla chips in medium sized. bowl.  Toss well to combine and set in refrigerator to marinate for about 15 minutes, stir a couple times while marinating.
  2. Add avocado just prior to serving, toss to combine.
  3. Serve with tortilla chips.


Dice the ingredients in a small dice, about 1/4″ so you get a little bit of everything in each bite.
