Watermelon Cucumber & Burrata Salad

This Watermelon Cucumber & Burrata Salad is surprisingly AWESOME!  The ingredients might seem a little unusual together…watermelon, cucumber, grapefruit, and burrata cheese, on a bed of arugula, but it works.

Watermelon Cucumber Burrata SaladI first had a similar salad at a restaurant here in town, Et Voila.  It was the special salad of the day and sounded very intriguing to me.  Never would have thought to put together watermelon, cucumber and grapefruit.  But I’m a sucker for trying new things, especially when it’s a chef’s special.  Three of us ordered the salad and all three of us loved it.  While I can’t say this salad I made today is an exact duplicate because I don’t have that recipe, I can say what I came up with is really incredible.  I added a bed of arugula to my salad for no real reason other than I had some so I thought I’d use it!

Have you ever had burrata before?  I was in Europe the first time I had burrata. I ordered a dish with burrata and thought I was ordering some kind of fish.  Imagine my surprise when it came and it was cheese!  The menu was in Italian so I couldn’t really understand it anyway.  However, what a pleasant surprise it was! Burrata looks like a fresh mozzarella cheese ball but when you cut into it, it has a thick creamy center made of little pieces of mozzarella cheese and a thick cream.  It’s rich, creamy and quite tasty!  But just like fresh mozzarella, I like a little salt & pepper, olive oil and balsamic on it to really compliment the cheese.

Watermelon Cucumber Grapefruit Burrata SaladAnd that’s what I did with this salad.  There’s no salad dressing on this Watermelon Cucumber & Burrata Salad, just a nice drizzle of good extra virgin olive oil and my go to favorite – balsamic glaze.  A little salt and fresh cracked pepper and that’s it.

Ingredients

Scale
  • 1 bag baby arugula
  • 2 C. watermelon cubes or balls
  • 1/2 English cucumber, sliced
  • 1 grapefruit, peeled and segmented
  • 1 ball of Burrata cheese
  • good quality olive oil
  • Balsamic glaze (or balsamic vinegar)
  • salt & pepper

Instructions

  1. Lay a bed of arugula on a platter. Remove ball of burrata from container and place on top of arugula. Arrange watermelon, cucumber and grapefruit pieces over arugula. Drizzle the salad with olive oil, balsamic glaze. Sprinkle with some kosher salt and fresh ground pepper over top.
