- 1 1/2 C. cornbread mix
 
 	- 2 Tbls. sugar (opt.)
 
 	- 2 eggs
 
 	- 2 Tbls. melted butter
 
 	- 1 C. sour cream (or plain greek yogurt)
 
 	- 1 C. creamed corn
 
 	- 1 C. frozen corn kernals
 
 	- 6 slices thick cut bacon, cut up
 
 	- 1/2 yellow onion, diced
 
 	- 1 1/2 C. shredded cheddar, divided (I used white cheddar)
 
Garnish with chopped chives or sliced scallion greens
