Have you noticed all the different flavored vodkas in the stores now? I’ve bought several, but still seem to prefer using fresh fruit or juice to get the flavor I want. But I’m always willing to try a new one, and my bar is stocked with several different flavored vodkas. One of those flavors is mango, so I thought I’d make you all a Coconut Mango-tini with mango flavored vodka today for your Hump Day Happy Hour.
I started with Absolute mango vodka and Malibu coconut rum (I suppose you could use a coconut flavored vodka if you’d like, I just don’t have that). Then I added a bit of pineapple juice to soften the liquor edge. It was pretty good, but not quite perfect yet. So on to the second try, which I really liked much better, I added some cream of coconut to the mix. I’ve never bought a can of cream of coconut before but picked one up a few weeks ago with the thought of making something with it. I was anticipating it to be like coconut milk but thicker. It’s not. At least the brand I bought, Roland, wasn’t. I would describe it more of a coconut simple syrup. Which, actually, was just what I thought this drink needed. Apparently this is what Pina Coladas are made out of. It’s pretty sweet so a little goes a long way in my opinion, but added just the right touch to this Coconut Mango martini.
Of course I had to take a sample to my resident taste tester, Joyce, and she confirmed…It’s a keeper!

Ingredients
- 2 oz. Absolute Mango vodka
- 1 oz. Malibu Coconut rum
- 1 oz. cream of coconut
- 3/4 oz. pineapple juice
- Garnish as desired with a slice of mango or pineapple
Instructions
- Combine all ingredients in a cocktail shaker filled with ice. Shake well and strain into a chilled martini glass. Garnish as desired.
