Mexican Quinoa Bowl with Chipotle Vinaigrette

Mexican Quinoa Bowl

Quinoa bowls are great to serve for parties or dinner for your family. Everyone can pick and choose what to put in their bowl. These ingredients are just suggestions…use your imagination to customize a quinoa bowl to your liking!


  • Carnitas
  • Chipotle Honey Lime Vinaigrette
  • Quinoa, cooked
  • Tomatoes, diced
  • Avocados, diced
  • Black Beans, canned – drained and rinsed (or homemade)
  • Cilantro, chopped
  • Fresh Corn (or canned or frozen, if you prefer)
  • Queso Fresco, crumbled


  1. Prepare Carnitas or other protein, if using.
  2. Prepare Chipotle Honey Lime Vinaigrette
  3. Cook quinoa according to package directions. Set aside.
  4. Cook corn. I like it grilled but you can cook however you prefer. Slice kernels off of the cob and set aside.
  5. Dice tomatoes and avocado (squirt with lime to prevent browning).
  6. To assemble: Place some quinoa in a bowl, top with the toppings. Drizzle a good amount of vinaigrette on top.
