Orange, Avocado & Fennel Salad

A refreshing and pretty summer salad
- Butter lettuce leaves
- 1 navel orange, peeled and sliced
- 1/2 bulb fennel, shaved or very thinly sliced (I didn’t use the core)
- 1/2 avocado, sliced
- 2 Tbls. chopped fresh mint
- 2 Tbls. diced red onion
Dressing:
- 1 Tbls. champagne vinegar
- 3 Tbls. olive oil
- 2 tsp. agave nectar (or honey)
- 1/2 tsp. orange zest
- pinch of salt & pepper
- Combine dressing ingredients in small bowl and whisk well. Set aside in refrigerator until ready to serve.
- Lay butter lettuce leaves on platter. Layer oranges, avocados, and fennel slices. Sprinkle mint and red onion on top. Drizzle dressing over salad.
