Orange, Avocado & Fennel Salad

orange avocado fennel salad

A refreshing and pretty summer salad


  • Butter lettuce leaves
  • 1 navel orange, peeled and sliced
  • 1/2 bulb fennel, shaved or very thinly sliced (I didn’t use the core)
  • 1/2 avocado, sliced
  • 2 Tbls. chopped fresh mint
  • 2 Tbls. diced red onion


  • 1 Tbls. champagne vinegar
  • 3 Tbls. olive oil
  • 2 tsp. agave nectar (or honey)
  • 1/2 tsp. orange zest
  • pinch of salt & pepper


  1. Combine dressing ingredients in small bowl and whisk well. Set aside in refrigerator until ready to serve.
  2. Lay butter lettuce leaves on platter. Layer oranges, avocados, and fennel slices. Sprinkle mint and red onion on top. Drizzle dressing over salad.
