No Bake Peanut Butter Banana Protein Bars

These No Bake Peanut Butter Banana Protein Bars are perfect for a quick breakfast on the go or a healthy snack.

I made these protein bars vegan by using vegan chocolate chips and maple syrup but you may substitute brown rice syrup or even honey, if desired.  Chocolate chips can be swapped out with any dried fruit like raisins, apricots, cherries, etc.

These tasty little protein bars are perfect for a quick breakfast or healthy snack. If you prefer dried fruit (raisins, apricots, cherries, etc.) just swap out the chocolate chips!

Ingredients

Scale
  • 1/2 C. peanut butter (I like chunky)
  • 1/4 C. maple syrup
  • 1 very ripe banana, mashed
  • 2 C. rolled oats
  • 1/2 C. vanilla protein powder
  • 1/4 C. flaked coconut (I use unsweetened)
  • 2 Tbls. flaxseed meal
  • 1/2 tsp. cinnamon
  • 1/4 tsp. sea salt
  • 1/2 C. chocolate chips

Instructions

  • Lightly spray a square 8×8 inch baking pan with cooking spray or line with parchment paper.
  • In large, microwave safe bowl, combine peanut butter, maple syrup and mashed banana.  Microwave to soften and combine ingredients well, about a minute or so.
  • In separate bowl, combine oats, protein powder, coconut, flaxseed, cinnamon, and salt.
  • Add oat mixture to peanut butter mixture and stir well to combine.  If it is a little dry add a couple tablespoons of water until it comes together.  Stir in chocolate chips.  If you want the chocolate chips melted a bit you can add them with the oats. (I did half and half)
  • Press mixture into the prepared pan and refrigerate until firm.
  • Once firm remove from refrigerator and remove from pan.  Slice into bars.
  • Store room temperature or refrigerated.
