When the weather warms up I like my rum drinks! Here’s a Pineapple Coconut Rum Cooler with a splash of ginger-lime simple syrup that’s refreshing and not too sweet.
This delicious cocktail has white rum and coconut rum, pineapple coconut juice, a simple syrup made with lime and fresh ginger and topped with club soda for some bubbles. It’s similar to my Rum Cucumber Cooler but this time I replaced the cucumber juice with pineapple coconut juice. The simple syrup is just sugar, lime juice and ginger. Garnish with some pineapple, a lime slice and you’ll feel very tropical! If you really want to get fancy rim the glasses with coconut (I thought about that after I took the picture).

Ingredients
- 2 oz. Rum (I used Bacardi)
- 1 oz. Coconut Rum (I used Malibu)
- 2 oz. Pineapple Coconut Juice (could use nectar)
- 1 oz. Ginger Lime Simple Syrup
- Club soda
To make the simple syrup:
- 1 cup Sugar
- 1 cup fresh Lime Juice
- 4 Tbls. grated fresh ginger
Instructions
Make the simple syrup: Combine sugar, lime juice and ginger in a small saucepan. Bring to a boil, reduce heat and simmer a few minutes. Set aside to cool. If you want a bit sweeter simple syrup use 1/2 cup lime juice and 1/2 cup water.
To make the cocktails: Combine cocktail ingredients except club soda in cocktail shaker filled with ice. Shake well and pour into 2 glasses filled with ice. Top each drink with club soda.
