It’s been a little while since I’ve made a plant based/vegan meal so today I have some quick and tasty Spicy Tofu Black Bean Lettuce Wraps.
Some crumbled firm tofu is sautéed up with a little diced onion, Mexican seasoning, a can of diced tomatoes and a can of black beans. I also added a little nutritional yeast, but you could omit that if you don’t have any. To finish it off, I used a plant based sour cream that I thinned out a bit with water to drizzle over the wraps, added avocado slices and some chopped cilantro. You could also add some of your favorite vegan shredded cheese and a squeeze of lime if you want.Print
