Watermelon Poke Bowl



For the Watermelon:

2  C. cubed watermelon

3 Tbls. soy sauce

2 Tbls.  sesame oil

1 Tbls. sesame seeds

2 tsp.  lime juice

1 tsp. garlic chili sauce (or Sriracha)

1 tsp. agave nectar

1 tsp. rice vinegar

2 scallions,  finely chopped

For the Bowls (use toppings you like… these are suggestions. and what I used):

Brown rice

thinly sliced cucumber

shredded carrot

sliced avocado


micro greens

pickled ginger

sliced jalapeno

Sriracha Mayo to drizzle on top


Prepare the watermelon:

Whisk together watermelon marinade ingredients in bowl, taste and adjust seasoning as needed.  Add watermelon cubes and marinate several hours or overnight.  I like to use a large ziplock plastic bag.

Assemble the bowls:

Add brown rice to individual bowls.  Scoop out some watermelon with a slotted spoon and add to bowls.  Finish bowls with desired toppings and a drizzle of Sriracha Mayo,  if desired.
