This simple, delicious Whipped Feta with Roasted Tomatoes makes a fantastic appetizer…A real crowd pleaser!

I’ve seen a lot of whipped feta dip recipes around and decided to give it a go!  This is a really easy recipe and one of those you can make ahead for a party.  No last minute preparation necessary.

Blend up a block of good feta cheese with a little Greek yogurt, a little garlic, lemon zest and a few spices and that’s it for the feta part.  Toss a container of grape tomatoes with some olive oil, garlic, salt & pepper and roast away.  Then just top the feta with the tomatoes and serve with some sliced baguette (I like to grill mine but totally not necessary).

Ingredients

Scale

Whipped Feta

  • 1 8oz. block Feta cheese
  • 4 Tbls. plain greek yogurt
  • zest of one lemon
  • 1 clove garlic
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried parsley
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Roasted Tomatoes

  • 1 container grape tomatoes
  • 2 Tbls. olive oil
  • 2 cloves garlic, rough chop
  • pinch of salt and pepper

For Serving

  • 1 baguette, sliced (rubbed with olive oil and grilled if desired)
  • Chopped fresh basil and oregano for garnish (opt.)

Instructions

Feta –  Combine feta ingredients in food processor and process, scraping down sides as necessary until creamy.

Roasted Tomatoes – Preheat oven to 400°.  Place tomatoes in baking dish, toss with olive oil, garlic, salt & pepper.   Cook in oven until tomatoes get soft and pop.  Remove from oven, set aside to cool.

To Serve – Spread whipped feta on bottom of serving platter.  Top with roasted tomatoes (and the juices from the tomatoes).  Garnish with fresh basil and oregano, if desired.  Top baguettes with some feta and tomatoes and devour!
