Decadent Chocolate Ice Cream

I love to make homemade ice cream and this Decadent Chocolate Ice Cream does not disappoint! It’s soft, rich and oh so creamy…a chocolate lover’s delight!

I recently bought a Ninja Creami ice cream maker and have been having a good time trying out different recipes…and, of course, eating way too much ice cream in the process!  This recipe produces more of a softer ice cream so if you want a firmer ice cream you’ll need to let it freeze overnight.  I’ve only made this chocolate ice cream in my Ninja Creami and not my regular ice cream maker so I can’t speak to how it turns out churned with a typical ice cream maker.  No doubt it would be just as excellent!

Decadent Chocolate Ice Cream

Ingredients

Scale
  • 1 C. semi sweet chocolate chips
  • 2 Tbls. unsweetened cocoa powder
  • 2 C. half & half
  • 2 eggs
  • 1 C. sugar
  • 1 tsp. vanilla extract

Instructions

Melt chocolate chips in double boiler over hot water (not boiling water).  Add half and half and continue to whisk until smooth and incorporated.  Remove from heat and set aside to cool a bit.

In mixing bowl, whisk eggs until light and fluffy.  I use a hand mixer on low speed.  Then gradually whisk or blend in sugar a little at a time.  Continue until all sugar is completly blended in.   Add vanilla and cooled chocolate/half & half mixture.  Whisk to combine.

If you’re using a Ninja Creami like I did here, divide mixture into two of the pints, cover with lids then freeze overnight.  Continue to blend in Ninja Creami on ice cream setting.  If you’re using a standard ice cream maker, refrigerate mixture for several hours (or overnight) then process in ice cream maker according to manufacturer’s directions.
