When the summer heat hits and it’s time to lounge by the pool… it’s Mai Tai time!

My dad first got me started making Mai Tai’s at home a long time ago.  He would fill a glass of full of ice, add some Bacardi rum, then add orange juice, pineapple juice and a little cherry juice from a jar of maraschino cherries.  Then he would top it of with a splash of Meyer’s dark rum and garnish with a pineapple chunk and cherry on a toothpick. They were so good and really quite simple to make.

The Mai Tai I make today is very similar, but I use orange pineapple juice and splash some pomegranate juice on top instead of the maraschino cherry juice (I don’t always have those cherries on hand but I always seem to have pomegranate juice for my pomegranate martinis).  Garnish with your favorite fruit… cherries (if you have them), pineapple, lime wedges or orange slices…and don’t forget the umbrella!

So go out there and add a little rum to the juice in your refrigerator…I think it’s a great way to get one (or two) of your recommended daily servings of fruit!

Ingredients

Scale
  • 2 oz. Bacardi white rum
  • 1 oz. Malibu coconut rum
  • 4 oz. orange pineapple juice*
  • splash Meyers dark rum
  • splash cherry or pomegranate juice

Garnish Options:

  • lime or orange slices
  • pineapple chunks
  • cherries

Instructions

  1. Fill a glass with crushed ice. Add Bacardi and Malibu coconut rum, then add orange pineapple juice. Top with a splash of cherry or pomegranate juice, then a top with a splash of Meyers rum.
  2. Garnish as desired with pineapple, maraschino cherry, lime slice or orange slices. For a full tropical effect, throw in an umbrella!

Notes

*Combination juices are delicious in this drink. Try Orange Pineapple Banana, or Orange Peach Mango for example. Any kind you like will taste delicious!
