These Hearts of Palm & White Bean Salad Sandwiches have been a go-to lately for a quick plant based lunch. I’ve used mashed white beans to replace mayonnaise for added protein and makes this sandwich filler lower in calories and fat!
This recipe is just like making a tuna salad sandwich but I’ve replaced the tuna with a plant based option – Hearts of Palm. The ingredients are flexible… don’t like celery? Leave it out. I used red onion but you can use scallions if you prefer. Just doctor it up with ingredients you like. If you want a lower carb option for lunch, this filling is great with lettuce wraps. That’s how I typically eat this delicious filling.

Ingredients
- 1 can white beans, drained
- 1 1/2 C. chopped Hearts of Palm
- 1/2 red, orange or yellow bell pepper, diced
- 1 stalk celery, diced
- 1/4 red onion, diced
- 1 tsp. Old Bay seasoning
- Fresh dill or about 1/2 tsp. dried
- 2 tsp. dijon mustard
- 1 tsp. whole grain mustard
- Squeeze of lemon juice
- Salt & Pepper, to taste
Instructions
Mash drained rinsed white beans in bowl. Add remaining ingredients and stir to combine. Taste and adjust seasonings to your liking.
