I made this Pineapple Jalapeño Salsa last weekend to serve on top of grilled salmon and I’m still thinking about how FANTASTIC the meal was!
This is another one of those need to use up something recipes. I bought a pineapple for garnishing some Mai Tai-tinis and after using it for that I wasn’t sure what I was going to do with what was left. I also had a salmon fillet I took out of the freezer to grill, but then we ended up going out to dinner and never cooked it. So it was one of those days where I had to “use it or lose it”. Made this delicious pineapple jalapeno salsa to top the grilled salmon. It’s a wonderful topping for the salmon but would also be fantastic served with chips!
Before grilling the salmon, I just brushed it with a bit of oil and seasoned it with salt and pepper and tossed it on the grill. Then I topped the salmon with the salsa we dug in. OMG…Sooooo good! You really should give this a try.Print
Pineapple Jalapeño Salsa
A delicious pineapple salsa to serve with chips or grilled fish or meats!
- 2 C small diced pineapple (about 1/2 pineapple, could use frozen, defrosted as well)
- 2 tomatoes, diced
- 1 jalapeno, viens and seeds removed, chopped
- 1/4 red onion, chopped
- 1/2 C chopped cilantro
- 1/2 lime, juiced
- 1 tsp. cumin
- pinch of salt
Combine all salsa ingredients and bowl and toss to combine. This can be done ahead of time and stored in refrigerator prior to serving. I prefer it served at room temperature.
To serve on top grilled salmon: Heat grill to low heat, about 250 degrees. Coat salmon fillet with a bit of oil and sprinkle with salt and fresh ground black pepper. Grill salmon on low heat until cooked, about 10 minutes (5 minutes on each side). Place on serving platter and top with salsa!
