It’s heating up here in Arizona so I’m making popsicles. Strawberry Cream Popsicles to be exact!
I made these Strawberry Cream popsicles over the weekend and it’s awfully hard to stop eating them. We all loved them. Not only are they so delicious and refreshing, they’re also so simple to make!
If you want to make these Strawberry Cream Popsicles plant based, vegan friendly, simply substitute the cream with your favorite vegan cream. You could even substitute with coconut cream for a delightful coconut flavor. I have also enjoyed these popsicles with a mint simple syrup. Yummy!
Strawberry Cream Popsicles
- Yield: 10 popsicles 1x
2 C. pureed strawberries (about 4 cups hulled strawberries)
1 C. simple syrup
1/4 C. heavy cream (or vegan cream, if desired)
1/2 lemon, juiced
Clean and hull strawberries, then puree in food processor. You’ll need 2 cups of strawberry puree which is about 4 cups hulled strawberries or just about a pound of strawberries.
Combine puree with remaining ingredients and mix well.
Pour in popsicle molds, insert popsicle sticks and freeze.
