Tomato, Cucumber & Feta Salad

  • 1 pint small grape tomatoes, sliced in half
  • 1/2 english cucumber, diced
  • 15 Kalamata olives, sliced in half
  • 1 C. feta cheese, diced* (use vegan, if desired)
  • 1/4 C. diced red onion
  • 2 Tbls. chopped fresh oregano
  • 2 Tbls. chopped fresh parsley
  • Just a light drizzle of your favorite vinaigrette (enough to very lightly dress the salad)
  • salt & pepper to taste


Add ingredients to a bowl and toss with your favorite vinaigrette. I made a simple vinaigrette with lemon juice, olive oil and greek seasoning, but any bottled greek salad dressing or simple vinaigrette would work just fine.


*I used Violife vegan feta today… I find it to be creamy but doesn’t have the same “bite” as regular feta so I like to first toss the cubes in a bowl drizzled with a little olive oil,  squeeze of lemon juice, sprinkle of Italian seasoning and some red pepper flakes, then I add it to the other salad ingredients.
