I’m a sucker for kitchen gadgets and realized I didn’t have a waffle maker. So, of course, I “had” to order one from Amazon and promptly made some really yummy Vegan Buttermilk Waffles. Using the term buttermilk here lightly since I’m using a plant based milk to make these vegan. If you don’t care about them being vegan you can certainly use real buttermilk.
Typically, I’m not a big breakfast eater but lately I’ve become one…something about all this Covid stay-at-home boredom and experimenting with all this plant based cooking. When I do eat breakfast it’s rarely pancakes, waffles or French toast since I made that so much when the kids lived at home I tired of it. Recently, I went through a long period of eating avocado toast with a sliced hard boiled egg and Everything but the Bagel seasoning everyday. Now my current go to seems to be smoothies (probably cuz it’s hot here in Arizona!). Anyway, to make a long story short, these vegan buttermilk waffles are shaking up my morning routine! I thought they were really tasty, not to mention easy to make extra for the freezer, then pop in the toaster for a quick breakfast.

Ingredients
For the Buttermilk:
1 1/2 C. plant based milk*
1 Tbls.. apple cider vinegar (could use lemon juice)
Dry Ingredients:
2 C. flour (I used all purpose flour)
1 Tbls. baking powder
1/2 tsp. salt
Wet Ingredients:
1/4 C. melted vegan butter (can use oil)
1 Tbls. maple syrup (or sweetener of choice)
1/2 tsp. vanilla
Instructions
- To make the “buttermilk” combine milk and apple cider vinegar in small bowl and set aside for a few minutes to thicken.
- In large bowl, sift together the dry ingredients.
- Combine wet ingredients with buttermilk. Add to dry ingredients. Gently mix the batter to combine but don’t overmix.
- Cook waffles according to your waffle maker’s instructions.
Notes
*I like to heat the milk up a bit in the microwave to bring it to room temperature first.
