Vegan Fruit Ceviche Style Salsa

I love ceviche so when I came across a recipe for a tropical vegan ceviche I had to give it a try.  The flavor is great and a good plant based substitute, but let’s be real, it’s not ceviche as one knows it. To me it’s more of a fruit salsa with a few typical ceviche ingredients.  So in light of that I’m calling this a Vegan Fruit Ceviche Style Salsa!  And, it’s good!

I would dice the ingredients for this Vegan Fruit Ceviche Style Salsa a smaller than what you see in the picture above. That way you’ll get a little bit more of everything in each bite. Serve with your favorite tortilla chips or make some from scratch.  I made these chips with Food For Life brand sprouted corn tortillas, sprinkled with salt and cooked in my air fryer for a couple minutes.

Vegan Fruit Ceviche Style Salsa

Ingredients

Scale

1/2 C. diced mango

1/2 C. diced papaya

1/2 C. diced pineapple

1/2 C. diced jicama

1/2 C. diced hearts of palm

1/2 C. diced English cucumber

1/2 C. chopped cilantro

1/2 C. diced red onion

1/4 C. sliced green onion

1/4 C. fresh lime juice + zest from the limes

1 tsp. chili powder

1/8 tsp. cayenne pepper

salt & pepper,  to taste

1 avocado, diced

Tortilla chips for serving

Instructions

  1. Combine all ingredients except avocado and. tortilla chips in medium sized. bowl.  Toss well to combine and set in refrigerator to marinate for about 15 minutes, stir a couple times while marinating.
  2. Add avocado just prior to serving, toss to combine.
  3. Serve with tortilla chips.

Notes

Dice the ingredients in a small dice, about 1/4″ so you get a little bit of everything in each bite.
