Homemade Irish Cream Ice Cream

Homemade Bailey's Irish Cream Ice Cream

Are you looking for a super decadent way to use up some of your Barb’s Bailey’s Irish Cream that hopefully you’ve made by now?  Well, if you haven’t used it in a bundt cake yet, how about making some rich, creamy Bailey’s Irish Cream Ice Cream?  In my opinion it’s never too cold outside for ice cream, and it’s toasty warm inside! This recipe is super easy and oh so good.

Bailey's Irish Cream Ice CreamAll that’s needed is some Irish Cream liqueur (homemade or bottled Bailey’s from the store), eggs, cream, sugar, a little chocolate and an ice cream freezer.  After the ice cream has been processed in your ice cream maker, put it in the freezer for a few hours to firm up a bit.  However, this ice cream does not freeze hard, it stays pretty soft and melts quickly…so eat it fast!  It’s so rich and creamy, a little goes a long way.  Enjoy!

Ingredients
  • 2 eggs
  • ¾ C. sugar
  • 2 C. heavy cream
  • 1 C. Bailey's Irish Cream
  • Smuckers Magic Shell chocolate syrup - as much as you like (probably about ¼ cup)
Instructions
  1. Whisk eggs in mixing bowl until creamy. Add sugar, a little bit at a time, while continuing to whisk to completely combine eggs and sugar. Whisk about a minute more. You want a light, fluffy mixture. Then add the heavy cream and Bailey's Irish Cream. Whisk to combine. Pour in ice cream machine and process according to machine directions. Toward end of processing squirt in some Magic Shell chocolate syrup (it hardens when cold, or you can add some shaved chocolate). Transfer to container and set in freezer to harden a few hours. It won't freeze hard but should set up a bit more.

    I was really excited and ready to try out this recipe, however, I do not have an ice cream machine.

    Is there anyone that has an alternative process that would allow me to do this without the ice cream machine? I was hoping to do this for my family of 4-5. It would have been the perfect dessert. Better than store bought ice cream… sigh…

      How frustrating to discover that I’m sure! Sorry. I’ve never made ice cream without the ice cream maker but I did a quick google search and came up with this method – http://www.tasteofhome.com/recipes/how-to-cook/how-to-make-ice-cream-without-an-ice-cream-maker It sounds like a bit of work but perhaps can be done. Not sure how this recipe would work, but you could give it a try. Just a reminder, this ice cream doesn’t freeze really hard due to the alcohol in in.

        Thank you so much! I will try that in the very near future. I had fun making the Irish Soda bread and I have to say, for a first timer, it came out pretty perfect! So that gives me hope on the ice cream!

      Try this one Lisa. There are plenty of examples on youtube but this one seems to involve less shaking 🙂

        Yes! Now I remember making ice cream this way as a kid! I had forgotten.

        This may seem silly but we have a big school reunion for a decade of classes to come together. This might be something that people would want to pitch in with to have fun with!

        There is nothing better than homemade ice cream!
