This is a refreshing Rice Noodle Salad with Spicy Peanut Dressing that’s big on flavor and very simple to toss together!
I recently made a batch of my go to Peanut Sauce to dunk some veggie spring rolls in. Yum! I decided to use some of the remaining sauce in a salad. I had some random vegetables, lettuce, cabbage, and herbs in the refrigerator and threw together this delicious salad. The flavor combination is fantastic… I especially love the combination of mint, basil and cilantro! You could use any Asian type noodle you like, I decided to use up some thin rice noodles today.

Ingredients
- 1/3 of 6.75oz. pkg. Maifun rice noodles
- Chopped lettuce*
- 1 cucumber, sliced (I used Persain cucumber)
- 1 carrot, peeled and sliced into ribbons
- 1/4 C. mint, chopped
- 1/4 C. cilantro, chopped
- 1/4 C. basil, chopped
- 1 green onion, sliced
To Top the Salad:
- Peanut Sauce (use water to thin to desired consistency)
- 1/4 C. peanuts, chopped
- 1 lime, cut in wedges for serving
Instructions
Soak noodles according to package directions to soften.
Arrange salad greens on serving plate. Pile noodles in middle and surround with remaining salad ingredients. Alternatively, you could just mix all the ingredients in large salad bowl if you’re not concerned about presentation.
Top with peanut sauce dressing, chopped peanuts and squeeze of lime juice.
Notes
*I used a combination of baby romaine and sliced Napa cabbage. Use whatever greens you prefer.
Also, you don’t have to be exact on these amounts… it’s a salad, use however much of each ingredient you like!
