Here’s a festive Whipped Feta with Cranberry Sauce and Pistachios for a delicious holiday appetizer!

I was experimenting with a homemade cranberry sauce recipe for Thanksgiving and needed something to do with it since it wasn’t Turkey Time yet!  My mom mentioned a feta dip with cranberries and pistachios she saw online and wanted to try.  Bingo! a perfect way to use up the cranberry sauce I made.  After all, I loved my Whipped Feta w/Roasted Tomatoes appetizer I recently made.  This time I omitted the garlic and spices and used cream cheese instead of greek yogurt for a simple base for the cranberry sauce.  We enjoyed this a lot.  It would make an impressive appetizer for your Thanksgiving or Christmas festivities!

Ingredients

Scale

For the Cranberry Sauce

  • 1 bag fresh cranberries
  • 3/4 C. apple cider or orange juice
  • 1 C. real maple syrup
  • 1/2 tsp. cinnamon
  • 2 tsp. orange zest
  • pinch of salt
  • 1/4 C. bourbon
  • 2 tsp. vanilla

For the Feta Dip:

  • 1 8oz. block feta cheese (not crumbled)
  • 4 oz. cream cheese, cut into cubes
  • 1/2 lemon, juiced

Garnish:  Chopped pistachios and drizzle of honey

Serve with toasted baguette slices

Instructions

Make cranberry sauce:  Combine all ingredients except bourbon and vanilla in saucepan.  Bring to a boil, reduce to medium and cook until cranberries pop.  Remove from heat and stir in bourbon and vanilla.  Set aside to cool, refrigerate.

Make Feta Dip:  Break apart feta into chunks and add to food processor. Add cream cheese and lemon juice. Blend until smooth and creamy.  You can add a little drizzle of olive oil or honey if needed to loosen it up and make it smooth and creamy.

To Serve: Spread feta dip on platter.  Top with cranberry sauce.  Sprinkle pistachios and drizzle honey over top.
