These Roasted Peach Popsicles are made with fresh peaches, vanilla yogurt and honey. Can we say they’re a healthy, no guilt treat for a hot summer afternoon? I hope so cuz I am!
I seem to have a bit of a peach obsession! I love peaches in all forms… dessert, salad, snacking, cocktails, whatever. If it has a peach in it I love it! Today it’s roasted peach popsicles. Simply take about 5 peaches, cut them in half and remove the pit. Roast in the oven to get a nice, deep peachy flavor. Once cooled you can remove the skins if you want, or leave them on, and blend up in a blender with the yogurt and honey. Pour into popsicle molds and freeze. Really simple and a tasty, refreshing treat!

Roasted Peach Popsicles
Ingredients
- 5 peaches, sliced in half and pitted
- 1/2 C. honey
- 2 C. vanilla yogurt (I used full fat)e
- 1 Tbls. lemon juice
Instructions
Preheat oven to 350 degrees.
Place peaches cut side down on parchment lined baking sheet or use a silicone baking mat. Optional, drizzle with some extra honey. Roast peaches in oven for 30-40 minutes, until soft and carmelized.
Once peaches have cooled, place in blender (peeled if desired) with yogurt, honey, and lemon juice. Blend until smooth. Taste mixture to ensure it’s sweet enough, add more honey if necessary.
Pour puree into popsicle molds and freeze until solid.
